Fail-proof rice.

I probably mentioned that Four is allergic to everything.

What do you eat when you are allergic to everything? Rice. A lot of rice. And probably white rice. (The child's skin does better with white rice.)

I could make risotto. But regular rice just seemed too complicated. (By this, I mean I didn't know how to make rice. Adam had to make it.)

So, Adam taught me how to make rice. Or Alison Holst did. (I think it was both of them.)

Long grain (white) rice
Boil 2 cups of water. (This is when an electric kettle comes in handy. Electric kettles are awesome.)

Put a medium-sized (not too big) pan on low heat. Add 1 Tablespoon of oil. (I like to use canola oil.)

Add 1 teaspoon of salt and 1 cup of basmati or jasmine rice. (I don’t bother to rinse it first, but if you want to, go right ahead.) Stir until the rice is coated.

Let the rice mixture heat for about a minute. (Not too long, or you will scorch the rice and have to start over.)

Add your boiling water to the rice mixture. Put a lid on the pot, and leave it on low heat for about 18 minutes. You can check to make sure all the water has been absorbed.

Take the pan off the heat and leave it covered until you are ready to serve. Fluff rice with a fork.

I had a very young flatmate fresh from mum and dad's when I first moved to NZ, and he didn't know how to cook. Myself and the other flatmate (both Canadians) both liked to cook and we both did our rice by your method. Shane must have watched us but had missed a crucial step. One night he made dinner for his girlfriend and after a bit he came out into the living room and asked for some help with the rice "It's been cooking for 20 minutes but it's still hard". Well yes it would be, if you hadn't added any water :P Poor guy, he was so embarrassed!

I finally switched to eating brown rice sushi and at first was all WTF? Now I can't believe I ever ate anything else.

Living with a Filipino means lots of white rice (he doesn't believe in brown rice). When we irst met, I tired to sneak in Minute Rice. I think Santa brought me a rice cooker that Christmas. So I cheat on white rice, but I love to make risotto the right way - standing and stirring and stirring and more stirring

Ive got lots of recipes for Gluten free and sugar free goodies if you ever need them. A lot of them contain Ground Almonds - so no good for nut allergies, but I do have a dreamy chocolate pudding recipe with no dairy, sugar, wheat or gluten. It does have a high calorie count, uses spenda as a sweetner (though theres nothing to stop you using sugar) and it tastes devine. Email me if you need anything :)

I don't know how to cook rice but fortunately I have a rice cooker. I just throw in the rice and some water, hit the button and twenty minutes later I have perfect fluffy rice. Not sure how it actually works, but it does and it's awesome. I just hope my rice cooker never craps out on me, I'd be in trouble.
